I'm getting an Apple watch and wanted to play around writing an app for it. Are there any tutorials on here to show how its done?

Depending on how long you are a member of HWS+ you have online access to Paul's books. I think you have to be a member for 18 months for this.

thanks i have checked the book, but it uses xcode 10 and we are on xcode 14 now so seems quite a bit out of date.

The latest edition of that book targets watchOS 9 and Swift 5.7 so it'll use at least the XCode version available when they were released - probably 14.x.
